Terroir:

 Rives de Longsault is a reflection of the terroir of our village of Davayé, which benefits from its hillside relief with clayey-limestone soils and its relatively warm climate. This vintage comes from plots of vines between 30 and 40 years old, on these particular terroirs with different exposures: Maillettes, Pommards, Roncesvalles, Carette, Péguins and Jonchet.

The wines are always consistent, with excellent balance and finesse.

 Chardonnay 100%

Vinification:

The grapes are pressed slowly using pneumatic presses. The must is settled at low temperature. Alcoholic fermentation is carried out at a controlled temperature in vats and barrels (30%) in order to preserve the natural freshness, the original fruitiness and the best expression of the terroir. After the alcoholic and malolactic fermentations, the wines are aged on fine lees until bottling in spring.

Tasting notes:

 Complex and fine nose, slightly woody. Rich aromatic palette composed of ripe fruit aromas, lemon, floral and mineral notes. The palate is in harmony with the nose, full, elegant and rich. The finish is delicious with a lot of finesse on a lemony minerality.

Food & Wine pairing:

Very pleasant as an aperitif with goat's cheese, this wine goes perfectly with fish, shellfish and seafood such as scallops.

It can also be served with white meats or cream fowl.
