The big red that stains Castelet de Canon Leveque is a cuvée made from a plot selection of small yields on the vines of alicante and syrah.

The alicante is a black grape variety native to Spain and renowned for producing colourful wines. Its alliance with Syrah, another black grape variety widely grown in the Languedoc, offers concentrated tannins well coated by the fruit.

The bunches of grapes, planted on clay-limestone soil and exposed in a magnificent setting, were picked at good maturity and reveal a rich aromatic intensity.

Le gros rouge qui tâche Castelet de Canon Leveque has a protected geographical indication Hérault. The winemaker has chosen to carry out a hot pre-fermentation maceration, i.e. to heat the juice and water the berries to bring the harvest, which has been destemmed and then crushed. This method gave this red wine its very fruity aromas in the mouth.

The robe of this wine is black, deep with purple reflections. On the nose, it will reveal all its freshness with aromas of black fruits, blackcurrant and spices.

By serving it at 17° C, it will go wonderfully with red meats, grilled beef ribs, Mediterranean tapas and cheese platters.
