Description: This Haut'dacieuse champagne from the Champagne house Jean-Pol Hautbois is characterized by its blend of five grape varieties. A pale gold color, a mineral champagne, with great salinity on the palate. A gourmet champagne. To be enjoyed as an aperitif or will go very well with seafood.
Dosage: extra brut 3.6 gr / liter

Bottling: March 2018
Manual harvest, sorting on the plot, monitoring and control of optimal maturity on the plot.
Pressing in whole bunch. First fermentation in vat after settling of the musts, then Malolactic fermentation. Aging of white grape varieties in amphorae for a minimum of 6 months, to be blended with reserve wines for black grape varieties. Then comes a last fermentation. This is slow and bottled lying on slats.
Disgorgement: September 2020.
The vineyard is located in the Saint Thierry massif with a soil from the tertiary sector: clay-limestone and sandy clay
Exposition of the South South / East vineyard.
Size: Marne valley, Cordon de Royat, Chablis.
Managing the vineyard in Sustainable Viticulture, High environmental value (HVE level 3) Controlled grassing, tillage. Respect for living things.
Blend: 50% Pinot Meunier 20% Pinot Noir 30% white grape varieties (Chardonnay, Arbanne, Petit-meslier)
