Description: This Haut'bsession cuvée from the Champagne house Jean-Pol Hautbois comes from a plot selection . Harvested with optimal maturity, we do not chaptalize for alcoholic fermentation. The must is exclusively made from the " cuvée heart ".
Vinified in oak casks , oak barrels and acacia barrels, this cuvée reflects the typicity of winemaking, and also all the power of Pinot Noir. Cork stopper print with staples. A golden yellow color with very ascending bubbles, a delicate effervescence. An ample and powerful mouth, to see opulent to finish on a touch of minerality. A champagne with significant vinosity.
Dosage: Extra Brut 4 gr / liter
Aging on slats: 66 months (cork stopper)

Manual harvest, sorting on the plot, monitoring and control of optimal maturity on the plot. The grapes come from a plot of selected Pinot Noir. We want optimal maturity. Pressing in whole bunch.
Vinification from " Cuvée heart ". First fermentation without chaptalisation, in thermoregulated stainless steel vats. Malolactic fermentation done. Aged in oak barrels , acacia barrels and oak casks. Then comes a last fermentation. This is slow and bottled lying on slats.
Disgorgement: September 2018. Vineyard located in the massif of Saint Thierry with a soil from the tertiary sector: clay-limestone and sandy clay
Exposition of the South South / East vineyard.
Size: Marne valley, Cordon de Royat, Chablis.
