This Haut'dacieuse champagne from the Champagne house Jean-Pol Hautbois is made with our best vintages of the year from pressing. Selected first during the harvest and secondly after several tastings of our clear wines. Pinot brings its structure and structure while Chardonnay gives its notes of finesse and lightness. The marriage of the two grape varieties gives a champagne of great finesse and length, worthy of a great champagne.
Part of this cuvée is made in oak barrels which brings roasted, brioche and slightly woody notes. This wine has a generous ample mouth which reveals vinosity, corpulence, a powerful style balanced by freshness at the end of the mouth. A golden yellow color, a rich, fine and elegant palate, with the opulence of Pinot Noir.
Dosage: Extra Brut 3.5 gr / liter
Aging on slats: 113 months
Harvest: 2010 < br /> Bottling: April 2011
Manual harvest, sorting on the plot, monitoring and control of optimal maturity on the plot. Pressing in whole bunch. Aging in oak barrels. First fermentation in vats and oak barrels for some of the Chardonnays of the blend. Malolactic fermentation done. Then comes a last fermentation. This is slow and bottled lying on slats.
Disgorgement: 2020.
Vineyard located in the Saint Thierry massif with a soil from the tertiary sector: clay-limestone and sandy clay
Exposure of the South-South / East vineyard .
Size: Marne valley, Cordon de Royat, Chablis.
