White wine from France, Appellation Ventoux Controlée
This wine sums up the philosophy of the estate, 20 years of work and restructuring of the vineyard. Put the right grape variety on the right soil, work in an ecological way, create harmony between the soil, the plant and its environment while keeping the objective of producing wines of a typical character specific to this magnificent place.
Terroir : limestone
Grape varieties : 30% Grenache blanc, 30% Roussanne, 30% Clairette, 10% Rolle
Vinification & aging : Night harvest, pressing under nitrogen and without sulphiting, stalling on lees for a minimum of ten days, fermentation in vats under controlled temperature. Aging in vats for 6 months on fine lees. Bottling in flower days.
Tasting : An expressive nose of white flowers, peach, grapefruit. A tonic citrus palate where the minerality and salinity bring a nice freshness.
Food and wine pairing : Grilled cod steak, fish with fennel sauce, scallop carpaccio
