

Red wine, AOC Pic Saint Loup, AOP Languedoc
This cuvée exists in both red and white colors, it comes from the most beautiful terroirs of the property, those with the healthiest water management. These are plots that have the best climatic exposure and whose soils are both draining and whose depth allows the constitution of a sufficient water reserve so that the plant does not suffer from summer drought. This results in obtaining a very homogeneous maturity, the berries of which offer an excellent balance between the quality of tannins, acidity and aromas. This balance allows more extensive work on the grapes (long maceration) and on the wine (long aging in barrels).
Terroir: mid-coast plots. Brown soils formed on scree of cretaceous limestone. Slopes ranging from 10 to 30% and altitudes varying from 150 to 300 meters.
Grape varieties: Mourvèdre, Grenache, Syrah.
Yield: 25 to 35 hl / ha for plots with densities ranging from 4000 to 7150 feet hectares. < / p>
Vinification: grapes destemmed and crushed. A fermentation period of 25 to 30 days.
Aging: maturing for 6 months in vats before pre-assembly which will then be matured for 12 months in barrels of 225 and 400 liters. New barrels, one wine and two wines.
