PRESENTATION :
The name of this appellation comes from the village of Chinon; its history goes back to the depths of the Gallo-Roman period. Just like the Loire Valley and the many castles that punctuate this region that has been Royal for so long, the Chinon appellation produces refined and elegant wines. The vineyards of Chinon are located around the city of Chinon including both banks of the Vienne River and up to the confluence of the Loire River.
The wine of Chinon is produced mainly from a single grape variety, Cabernet Franc (maximum 10% Cabernet Sauvignon allowed in the blend).
The vinification is traditional and the maturing is done in thermo-regulated stainless steel vats.
Maceration lasts about fifteen days.
TASTING NOTES :
Colour : Brilliant colour with purple tints.
Nose : Red fruits with spicy notes.
Palate : The mouth presents silky and elegant tannins, a Chinon haute couture.
Serving temperature : Ambient or cool 14 ° C.
Gourmet Suggestions : Can be appreciated with cold meats, terrine of pâté en croute, white or red meat, cheeses.
